Description

These 30-Minute Baked Lemon Chicken Meatballs are packed with irresistible flavor, made with simple ingredients like ground chicken and lemon zest, making them perfect for a quick, homemade meal.

Ingredients

Scale
  • 1 pound ground chicken
  • 1 egg
  • ½ cup breadcrumbs
  • ¼ cup shredded onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • zest of 1 lemon
  • ¼ cup grated parmesan

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. In a large bowl, combine all of the ingredients.
  3. Mix thoroughly using a fork or your hands until well combined.
  4. Line a baking sheet with parchment paper.
  5. Scoop tablespoon-sized portions of the mixture, roll them into balls, and place on the baking sheet. You should make about 30 meatballs depending on size.
  6. Bake for 20-25 minutes until the meatballs are slightly golden and cooked through.
  7. Serve with your favorite dipping sauce, over pasta, rice, or alongside veggies.

Notes

Adjust seasoning to taste if desired.
These meatballs freeze well, so you can make a double batch for later.
Opt for chicken thigh meat for a richer flavor.
