  • Eye-Catching Appeal: Shaped like graduation caps and diplomas, these cookies are guaranteed to impress your friends and family.
  • Flexible Serving: Ideal for graduation parties, family gatherings, or as a thoughtful gift for a recent graduate.
  • Customization Options: Use food coloring to personalize your cookies according to school colors, making your treats even more festive.

Ingredients You’ll Need

  • 2 cups all-purpose flour (plus more if needed): This provides the base for your cookies. If you find the dough is too sticky, adding a little extra flour will help!
  • 1/4 teaspoon salt: Balances the sweetness and enhances the flavor.
  • 1/4 teaspoon baking powder: Helps the cookies to rise slightly, giving them a nice texture.
  • 1/2 cup butter (softened slightly): Use unsalted butter for the best flavor. Make sure it’s at room temperature to blend smoothly with the sugars.
  • 3/4 cup sugar: Granulated sugar gives the cookies their sweetness and a beautiful golden-brown color when baked.
  • 1 large egg: Binds the ingredients together and adds moisture.
  • 3/4 teaspoon pure vanilla extract: Pure vanilla adds a warm, inspiring flavor that works wonderfully in cookies.
  • 1/2 teaspoon almond extract: This slight hint of almond elevates the flavor profile, making it richer.
  • 16 ounces white chocolate: For dipping your cookies and adding a sweet, creamy finish. High-quality white chocolate will yield better results.
  • 1/3 cup light corn syrup (plus more if needed): This helps the chocolate to adhere to the cookies smoothly and adds shine.
  • Food coloring (flesh tone and other color for your grad caps): Use gel food coloring to get vibrant shades for your cookie designs.

How to Make Graduation Cap & Diploma Sugar Cookies

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the Dough: In a large bowl, whisk together the all-purpose flour, salt, and baking powder. In a separate bowl, beat the softened butter with the sugar until it’s light and fluffy. This should take about 2-3 minutes.
  3. Combine Ingredients: Add the egg, vanilla extract, and almond extract to the butter mixture, mixing until well combined. Gradually add the dry ingredients to the wet ingredients until a soft dough forms. If it’s too sticky, sprinkle in a touch more flour.
  4. Chill the Dough: Cover the dough with plastic wrap and chill in the fridge for about 30 minutes to an hour, which will help you shape the cookies easily.
  5. Shape the Cookies: Roll the dough onto a lightly floured surface to about 1/4-inch thickness. Cut the dough into graduation cap shapes using a cookie cutter, then transfer to the prepared baking sheet.
  6. Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them—overbaking will take away the softness!
  7. Cool Down: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. Prepare the Chocolate: While cooling, melt the white chocolate in a microwave-safe bowl using short bursts of heating (30 seconds at a time), stirring in between. Add corn syrup to give it a glossy sheen.
  9. Dip the Cookies: Once the cookies are cool, dip them into the melted white chocolate to coat half of each cookie. Tap off any excess chocolate and allow it to set on parchment paper.
  10. Decorate: Use your food coloring to create caps and diplomas on the cookies. For caps, shape small squares and attach them using a bit of melted chocolate. Draw diplomas rolled up with edible ink pens or more melted chocolate.

Storing & Reheating

To store your cookies, keep them in an airtight container at room temperature for up to five days. If you want to extend their freshness, you can refrigerate them for up to a week. For long-term storage, they can be frozen for up to three months. Place the decorated cookies in a single layer in a freezer-safe container. To refresh them, simply let them thaw at room temperature for 30 minutes before enjoying again. Note that the chocolate may become less crisp after freezing, but the flavor will remain delightful.

Chef’s Helpful Tips

  • Avoid Dry Cookies: Don’t overmix the dough, as it can lead to tough cookies.
  • Room Temperature Butter: Make sure your butter is softened but not melted for the best texture.
  • Dough Chilling: Chilling the dough is essential for shaping and helps the cookies maintain their form while baking.
  • Decorating Essentials: Invest in good quality food coloring to ensure vibrant designs that pop.
  • Experiment with Flavors: Feel free to substitute almond extract with lemon or orange for a bright twist!

Soft, buttery, and adorably decorated, these cookies have everything you need for a memorable celebration. Whether you’re throwing a graduation party or simply want to bake the day away, these treats will leave a lasting impression. Feel free to customize them—the sky’s the limit with decorations! I can’t wait for you to try these fun treats and see how everyone lights up with joy when they take that first bite.

Recipe FAQs

Can I use a different type of chocolate for dipping?

Absolutely! While white chocolate gives the classic look and flavor, you can also use milk chocolate or dark chocolate depending on your preference. Just remember to adjust the melting technique as needed.

How can I make these cookies ahead of time?

You can prepare the dough in advance and keep it in the fridge for up to 3 days or freeze it for up to a month. Simply thaw and roll out when you’re ready to bake.

What can I use instead of corn syrup in the chocolate coating?

If you’re looking for alternatives, light agave syrup or honey can work, but keep in mind they might slightly alter the texture and gloss of your coating.

Why are my cookies spreading too much while baking?

This can often happen if the dough is too warm when going into the oven. Chill the dough adequately before rolling, and ensure your butter is softened—not melted, to maintain structure during baking.
