- 27 ladyfingers
- 1 cup espresso
- 2 tablespoons Irish cream
- 2 tablespoons cocoa powder
Instructions
- In a large mixing bowl, combine the cold heavy cream, sugar, Irish Cream, vanilla extract, and vanilla instant pudding. Mix with an electric hand mixer until soft peaks form.
- Add the room-temperature mascarpone cheese and mix until smooth and creamy, avoiding overmixing to prevent curdling.
- Prepare a mixture of espresso and Bailey's in a shallow bowl. Quickly dip the ladyfingers in the coffee mixture for 1-2 seconds and layer them in a 13×9-inch baking dish.
- Spread half of the mascarpone mixture over the soaked ladyfingers, smoothing it with a spatula.
- Add another layer of dipped ladyfingers, then top with a thin layer of the remaining mascarpone cream.
- Transfer the rest of the filling into a piping bag with a round tip and pipe dollops of cream over the thin layer of mascarpone.
- Cover with plastic wrap and refrigerate for at least 4 hours to allow the ladyfingers to soften. Before serving, dust generously with cocoa powder.
