  • 2 cups heavy cream cold
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons vanilla instant pudding
  • â…” cup Irish cream
  • 1 lb mascarpone cheese room temp
  • 27 ladyfingers
  • 1 cup espresso
  • 2 tablespoons Irish cream
  • 2 tablespoons cocoa powder

Instructions

  • In a large mixing bowl, combine the cold heavy cream, sugar, Irish Cream, vanilla extract, and vanilla instant pudding. Mix with an electric hand mixer until soft peaks form.
  • Add the room-temperature mascarpone cheese and mix until smooth and creamy, avoiding overmixing to prevent curdling.
  • Prepare a mixture of espresso and Bailey's in a shallow bowl. Quickly dip the ladyfingers in the coffee mixture for 1-2 seconds and layer them in a 13×9-inch baking dish.
  • Spread half of the mascarpone mixture over the soaked ladyfingers, smoothing it with a spatula.
  • Add another layer of dipped ladyfingers, then top with a thin layer of the remaining mascarpone cream.
  • Transfer the rest of the filling into a piping bag with a round tip and pipe dollops of cream over the thin layer of mascarpone.
  • Cover with plastic wrap and refrigerate for at least 4 hours to allow the ladyfingers to soften. Before serving, dust generously with cocoa powder.

Notes

Ensure all ingredients are at the proper temperatures for the best results, especially the mascarpone cheese.
For added flavor, consider infusing the espresso with a pinch of cinnamon or nutmeg.
