  • 8 chicken thighs (bone-in, skin-on)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 ½ teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  • Preheat your oven to 425°F (220°C).
  • Remove the chicken thighs from the fridge and let them come to room temperature. Pat them dry with a paper towel.
  • In a small bowl, mix together garlic powder, onion powder, paprika, oregano, thyme, salt, and black pepper to create the spice blend.
  • Place the chicken in a large mixing bowl, add olive oil and â…” of the spice mixture, and coat all sides of the chicken thoroughly.
  • Arrange the seasoned chicken on a rack atop a baking sheet, sprinkling the remaining spice blend over the top.
