Ingredients
Scale
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 & 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips
- 3/4 cup chopped cadbury mini eggs
Instructions
- Preheat the oven to 325°F and line baking sheets with parchment paper.
- Melt the butter in a medium saucepan over medium heat, stirring occasionally until it turns golden brown and smells nutty. Remove from heat and cool to room temperature in a bowl.
- Combine the brown butter with brown sugar and granulated sugar, whisking until well mixed. Add the egg and vanilla extract, and whisk smooth.
- In a separate bowl, mix the flour, baking soda, and salt. Slowly add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the mini chocolate chips and chopped Cadbury mini eggs.
- Using a large cookie scoop or spoon, drop rounded balls of dough onto the prepared baking sheets.
- Bake for 13 minutes, or until the edges are set but the centers remain slightly soft.
- Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
Make sure to let the browned butter cool before mixing it with the sugars to prevent scrambling the egg.
