If you adore buffalo chicken recipes, then you’ll be head over heels for these Buffalo Chicken Roll-Ups! These delightful appetizers are crafted using a puff pastry sheet that’s filled with creamy chicken, mozzarella, and cheddar cheese, all tossed with zesty buffalo sauce. After being rolled up and sliced into bite-sized pieces, they’re baked until they’re beautifully golden brown. (You can also whip them up in an air fryer!) Everyone who’s tasted them has raved about their incredible flavor! Ingredients & Substitutions

  • Puff Pastry: This recipe calls for one sheet of puff pastry, which you should thaw following the package guidelines. Alternatively, you could make your own puff pastry, as detailed in my Apple Turnover recipe. If puff pastry isn’t available, you can substitute it with a sheet of crescent roll dough or rolled-out pizza crust dough. Just remember that the baking time may need adjusting if you use different dough types.

  • Cream Cheese: Allow the cream cheese to soften to room temperature for easier blending with the other ingredients in the filling.

  • Chicken: This recipe is perfect for utilizing leftover rotisserie chicken or any other cooked chicken you may have, like my shredded chicken. Just make sure to chop it into small pieces to mix well into the filling.

  • Cheese: I enjoy the combination of shredded mozzarella and sharp cheddar cheese. However, feel free to use all of one type if that’s what you have. For a twist, consider trying Monterey Jack, Pepper Jack, Gouda, or your go-to cheese blend.

  • Buffalo Sauce: I have a fantastic homemade buffalo sauce recipe, or you can use your favorite store-bought version. Please note that hot sauce and buffalo wing sauce are not the same. Keep some extra buffalo sauce on hand for drizzling over the baked roll-ups! If you want to amp up the spice, add more buffalo sauce as desired!

  • Ranch Dressing: There’s often a debate over which dressing pairs best with buffalo chicken dishes—are you team ranch or team blue cheese? Regardless, these roll-ups are delicious as is, and can be enjoyed without any dressing.

Can I Assemble Buffalo Chicken Roll-Ups Ahead Of Time?

Absolutely! You can prepare the roll-ups up to 24 hours prior to baking. After rolling up the buffalo mixture in the puff pastry, wrap it tightly in plastic wrap and store it in the refrigerator. (You can keep any leftover buffalo chicken mixture in an airtight container in the fridge as well.) When you are ready to bake, allow the roll-ups to sit at room temperature for 15-20 minutes as you preheat the oven. Then, proceed to bake them as directed.

Storing & Reheating Buffalo Chicken Roll-Ups

If you happen to have leftovers (though it’s hard to imagine!), let the buffalo chicken roll-ups cool completely before storing them in an airtight container in the refrigerator. They should stay fresh for up to three days. To reheat, warm the roll-ups in the oven or air fryer to regain their crispness. I’ve also tried microwaving one, and it came out just fine!

Yes, you can freeze these buffalo chicken roll-ups either before or after baking. Here’s how:

  • Freezing Before Cooking: Wrap the roll-up, which is in the puff pastry but not yet sliced, tightly in plastic wrap. Store in a freezer-safe container, where they can last for 2-3 months. When ready to slice and bake, thaw them in the refrigerator overnight.

  • Freezing After Cooking: If you’ve already baked them, allow the roll-ups to cool completely. Then, store them in freezer-safe containers for 1-2 months. When you want to enjoy them again, defrost in the refrigerator. Keep in mind that the texture of the puff pastry may alter slightly after freezing and reheating.

Instructions

  1. Preheat your oven to 400°F. Line a large baking sheet with parchment paper and set it aside.

  2. In a medium bowl, combine cream cheese, chicken, mozzarella, cheddar, and buffalo sauce. Stir until fully mixed (this yields about 3 cups). Set aside as you prepare the puff pastry.

  3. On a lightly floured surface, roll out the puff pastry to form a 9×12-inch rectangle.

  4. Spread 2 cups of the buffalo chicken mixture evenly over the puff pastry, leaving about a ½-inch border along one long edge.

  5. Brush the ½-inch border of the puff pastry with a little beaten egg to help seal the dough while rolling.

  6. Starting from the opposite long edge, tightly roll the pastry into a log shape. Press the edges to seal.

  7. With a sharp knife, slice the log into 12 equal pieces. Brush the exposed edges of the pastry with the remaining beaten egg and bake for 15-18 minutes.

  8. Once done, remove the roll-ups from the oven. Top each one with a spoonful of the reserved buffalo chicken mixture and return them to the oven for an additional 6-8 minutes, or until the pastry is golden and the filling is heated through.

  9. Drizzle with buffalo sauce and ranch dressing, then garnish with parsley before serving.

Notes

Air Fryer Instructions:

  1. Assemble the roll-ups as instructed.
  2. Place the assembled roll-ups into the basket of your air fryer, working in batches if needed.
  3. Air fry at 325°F for 10-12 minutes.
  4. After 10 minutes, carefully add a spoonful of reserved buffalo chicken mixture on top of each roll-up.
  5. Air fry for another 2-3 minutes, or until the pastry is golden and the filling is heated through. Keep an eye on them, as cooking times can vary!
