Description

These Carrot Cake Bars with Cream Cheese Frosting are a delightful treat! Featuring moist, flavorful carrots, sweetened coconut, and a creamy frosting, they are perfect for gatherings or a cozy dessert. Simple to make and incredibly satisfying!


Ingredients

  • 1¼ cups unsweetened applesauce or oil
  • 2 cups granulated sugar
  • 3 large eggs room temperature
  • 2 cups all-purpose flour spooned and leveled
  • 1 teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 2 cups grated carrots finely shredded
  • 1 cup shredded sweetened coconut
  • 1 cup chopped nuts optional
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple not drained
  • ½ cup salted butter softened
  • 8 ounces cream cheese softened
  • 1 teaspoon vanilla extract
  • 1 pound powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix the applesauce or oil with sugar until combined.
  3. Add the room temperature eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the flour, baking soda, baking powder, sea salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the grated carrots, shredded coconut, chopped nuts, vanilla extract, and crushed pineapple.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake in the preheated oven for about 25 minutes or until a toothpick inserted in the center comes out clean.
  9. While the bars are cooling, prepare the cream cheese frosting by beating softened cream cheese and butter together until fluffy.
  10. Add vanilla extract and gradually mix in powdered sugar until well combined and smooth.
  11. Spread the frosting over the cooled carrot cake bars, cut into squares, and enjoy!

Notes

You can replace half of the granulated sugar with brown sugar for extra moisture.
For added flavor, consider adding crushed pineapple for extra sweetness in the batter.
These bars can be stored in the refrigerator for up to a week.
