Description

These Carrot Cake Bars are a delightful treat bursting with flavor. Made with fresh shredded carrots and topped with cream cheese frosting, they are easy to prepare and perfect for any occasion.


Ingredients

  • ¾ cup avocado oil
  • ½ cup granulated sugar
  • ¾ cup light brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup shredded carrots, ~2 medium carrots
  • 16 oz. cream cheese frosting

Instructions

  1. Preheat the oven to 350℉ and grease a 9×9-inch cake pan. Set aside.
  2. In a large bowl, mix the avocado oil, granulated sugar, and brown sugar together. Add the vanilla extract and eggs, mixing until well combined. Set aside.
  3. In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Add the dry ingredients to the wet mixture and stir until combined. Fold in the shredded carrots.
  5. Pour the batter into the prepared cake pan and bake for 30-40 minutes, or until a toothpick inserted comes out clean. Allow the cake to cool completely, around 2-3 hours, before frosting.
  6. Top the cooled bars with cream cheese frosting and slice into 12 pieces.

Allow the cake to cool completely before frosting for the best results.
Store leftover bars in an airtight container at room temperature for up to 3 days.
These bars can be frozen for up to 3 months—wrap them tightly before freezing.
