Description

This Cheesy Potato Soufflé is a delightful dish combining fluffy potatoes and rich cheeses, perfect for family gatherings or cozy dinners. Quick to make and irresistibly delicious!


Ingredients

  • 2 lbs potatoes (Yukon Gold or Maris Piper)
  • 8 oz cream cheese
  • 1 cup cottage cheese
  • 4 tbsp butter
  • 2 eggs
  • 2 tbsp chives
  • Salt to taste

Instructions

  • Preheat the oven to 350°F (180°C).
  • Peel and chop potatoes into chunks. Boil in salted water until tender (15-20 minutes).
  • Drain potatoes and let steam dry.
  • Combine cream cheese, cottage cheese, and 2 tablespoons of melted butter. Mix until smooth.
  • Add eggs and mix again until well-combined.
  • Mash the cooked potatoes, mix in chives, and fold into the cheese mixture. Season with salt.
  • Transfer to a buttered 9×13 inch baking dish and drizzle with the remaining melted butter.
  • Bake for 30 minutes until golden and slightly puffed.

Notes

Use full-fat cream cheese for the best richness.
Make ahead by preparing the mixture earlier and refrigerate until ready to bake. Bring to room temperature before baking.
Experiment with added flavors like garlic powder or nutmeg.
