- 8 chicken thighs
- 3 cloves of garlic
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 2 bay leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/4 cup brown sugar
- 1 cup green olives (pitted or non-pitted)
- 1 cup pitted prunes
- 1/4 cup capers
- Salt (to taste)
- 1/2 cup white wine
- Chopped parsley (for garnish)
Instructions
- Peel and chop the garlic cloves, or use a mini food processor.
- In a large glass or ceramic bowl, mix garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add green olives, pitted prunes, capers, a pinch of salt, and chicken thighs; mix well to coat the chicken.
- Cover the bowl with plastic wrap and refrigerate overnight or at least for 3 hours.
- Preheat the oven to 180C/350F.
- Arrange the chicken and marinade in a large baking pan or two smaller pans to avoid overcrowding.
- Pour white wine around the chicken, avoiding splashes on the chicken skin.
- Roast for 50 minutes to 1 hour until the chicken is cooked through and skins are golden, reaching an internal temperature of 74C/165F.
- Sprinkle chopped parsley before serving.
Notes
For best flavor, marinate the chicken overnight.
Use a meat thermometer to ensure chicken is fully cooked.
