Description

Chicken Marbella features tender chicken thighs marinated in a savory blend of garlic, herbs, olives, and prunes. This easy, flavorful meal is perfect for any occasion, offering a delightful escape into comfort food with minimal prep needed.


Ingredients

  • 8 chicken thighs
  • 3 cloves of garlic
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 bay leaves
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/4 cup brown sugar
  • 1 cup green olives (pitted or non-pitted)
  • 1 cup pitted prunes
  • 1/4 cup capers
  • Salt (to taste)
  • 1/2 cup white wine
  • Chopped parsley (for garnish)

Instructions

  1. Peel and chop the garlic cloves, or use a mini food processor.
  2. In a large glass or ceramic bowl, mix garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
  3. Add green olives, pitted prunes, capers, a pinch of salt, and chicken thighs; mix well to coat the chicken.
  4. Cover the bowl with plastic wrap and refrigerate overnight or at least for 3 hours.
  5. Preheat the oven to 180C/350F.
  6. Arrange the chicken and marinade in a large baking pan or two smaller pans to avoid overcrowding.
  7. Pour white wine around the chicken, avoiding splashes on the chicken skin.
  8. Roast for 50 minutes to 1 hour until the chicken is cooked through and skins are golden, reaching an internal temperature of 74C/165F.
  9. Sprinkle chopped parsley before serving.

Notes

For best flavor, marinate the chicken overnight.
Use a meat thermometer to ensure chicken is fully cooked.
This dish pairs well with rice or a fresh salad.
