- 3 cloves fresh garlic (minced)

- 1/2 tsp black pepper (plus more to taste)
- 4 cups fresh spinach (packed)
- 8 oz button or cremini mushrooms (sliced)
- 2 tbsp butter
- 4 oz cream cheese (softened to room temperature)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts on both sides with salt, pepper, thyme, oregano, and basil.
- In a large oven-safe skillet, heat olive oil over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown.
- Remove chicken from the skillet and set aside.
- Melt butter in the same skillet, add sliced mushrooms and minced garlic, and sauté for about 5-7 minutes until tender and browned.
- Stir in fresh spinach and sauté until wilted, about 2-3 minutes.
- In a mixing bowl, whisk together cream cheese, heavy cream, Parmesan, and chicken broth until smooth.
- Layer the spinach and mushroom mixture in a baking dish, place seared chicken on top, and pour sauce evenly over.
- Bake uncovered for 20-25 minutes until chicken reaches 165°F (74°C) and sauce is bubbling.
- Optional: Broil for 2-3 minutes for a golden top.
Notes
For a variation, use avocado oil instead of olive oil for searing.
