  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • 2 tbsp olive oil (for searing)
  • 3 cloves fresh garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt (plus more to taste)
  • 1/2 tsp black pepper (plus more to taste)
  • 4 cups fresh spinach (packed)
  • 8 oz button or cremini mushrooms (sliced)
  • 2 tbsp butter
  • 4 oz cream cheese (softened to room temperature)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup chicken broth

Instructions

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts on both sides with salt, pepper, thyme, oregano, and basil.
  • In a large oven-safe skillet, heat olive oil over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown.
  • Remove chicken from the skillet and set aside.
  • Melt butter in the same skillet, add sliced mushrooms and minced garlic, and sauté for about 5-7 minutes until tender and browned.
  • Stir in fresh spinach and sauté until wilted, about 2-3 minutes.
  • In a mixing bowl, whisk together cream cheese, heavy cream, Parmesan, and chicken broth until smooth.
  • Layer the spinach and mushroom mixture in a baking dish, place seared chicken on top, and pour sauce evenly over.
  • Bake uncovered for 20-25 minutes until chicken reaches 165°F (74°C) and sauce is bubbling.
  • Optional: Broil for 2-3 minutes for a golden top.

Notes

For a variation, use avocado oil instead of olive oil for searing.
Ensure cream cheese is at room temperature for smooth sauce mixing.
Experiment with different cheese types for added flavor.
