Description

These Chocolate Raspberry Truffles feature a rich chocolate exterior and a creamy raspberry center, offering a delightful blend of flavors perfect for any occasion. They’re easy to make and always a crowd-pleaser, ideal for sharing during festivities or enjoying yourself!


Ingredients

Scale
  • 1 1/3 cup Frozen raspberries
  • 1/4 cup Powdered sugar
  • 1/4 cup Heavy whipping cream
  • 7 oz Good quality white chocolate
  • 1 TBSP Water
  • 7 oz Dark chocolate (52% to 70% cocoa)
  • Pink chocolate (ruby chocolate or pink candy melts)

Instructions

  • Defrost the raspberries until softened.
  • Chop the white chocolate finely and place in a mixing bowl.
  • Blend thawed raspberries into a smooth puree.
  • Strain the raspberry puree through a fine mesh strainer.
  • Combine strained puree with powdered sugar in a saucepan and cook until reduced.
  • Stir in heavy cream until mixed thoroughly.
  • Pour the warm raspberry mixture over the chopped white chocolate, stirring to melt.
  • Refrigerate the ganache until firm, about two hours.
  • Scoop out portions, shaping them into balls.
  • Melt the dark chocolate in a microwave-safe bowl.
  • Dip each truffle in melted dark chocolate and place on parchment paper.
  • Chill the truffles until set, about 25 minutes.

Notes

Store truffles in an airtight container at room temperature for up to three days.
Truffles can be frozen for up to three months; thaw at room temperature before serving.
For a decorative touch, consider drizzling with ruby chocolate.
