Ingredients
- Rice (long grain white or basmati)
- Fresh lime juice
- Fresh cilantro
- Oil (lightly flavored olive oil or avocado oil)
- Salt
Instructions
- Rinse the rice under cool water for 1-2 minutes until water runs clear.
- In a pot, boil water and add oil, salt, and rinsed rice. Simmer covered for 20-25 minutes.
- Finely chop cilantro while the rice cooks. Once rice is done, fluff it and mix in oil, lime juice, and cilantro.
- Taste and adjust seasoning. Serve warm.
Notes
Thoroughly rinse rice to avoid clumping.
This rice can be prepared a day ahead; reheat with a sprinkle of cilantro.
Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 3-4 months.
