Description

Circus Animal Cookie Rice Krispie Treats combine the delightful flavors of cookies, marshmallows, and cereal for an easy dessert that will bring smiles all around. Perfect for parties or a simple treat!


Ingredients

  • 9 ounces circus animal cookies
  • 10 ounces mini marshmallows
  • 6 cups rice krispies cereal
  • 4 tablespoons unsalted butter
  • 3 tablespoons multi-colored nonpareils
  • 3 tablespoons colored sprinkles
  • 1/2 cup white chocolate chips
  • 12 drops red food coloring
  • 1/2 teaspoon heavy cream (optional)

Instructions

  • Grease a 9×13-inch baking dish with cooking spray.
  • Pulse cookies in a food processor until they are a mix of crumbs and small pieces, reserving 1/2 cup of larger pieces.
  • In a large pot, melt butter and marshmallows over low heat, stirring constantly until smooth and well combined.
  • Remove from heat, then fold in rice krispies, cookie crumbles, and 2 tablespoons each of the multi-colored nonpareils and colored sprinkles.
  • Gently press the mixture into the greased baking dish using a greased silicone spatula for even distribution.
  • Sprinkle the reserved cookie pieces over the top of the mixture in the pan.
  • Melt white chocolate chips in two separate bowls in the microwave for 30 seconds.
  • Drizzle the plain white chocolate over the treats using a sandwich bag with the corner cut off for precision.
  • Add red food coloring to the second bowl to create pink chocolate, then drizzle it in the opposite direction for contrast.
  • Finish by topping with the remaining sprinkles and allow to cool until completely set.

Notes

For an extra creamy texture, you can add 1/2 teaspoon of heavy cream when melting the marshmallows.
Experiment with different colored sprinkles to match the occasion!
These treats can be stored in an airtight container for up to a week.
