- 1 cup long-grain white rice, rinsed
- 4 cups water
- 2 cinnamon sticks
- 2 cups milk, dairy or dairy-free milk
- â…“ cup maple syrup, or other sweetener
- 1 teaspoon vanilla extract
Instructions
- Add the rice, water, and cinnamon sticks to a high-powered blender and blend for 40 to 60 seconds until well-ground.
- Pour the blended mixture into a large container, cover, and chill in the fridge for 8 to 12 hours or overnight.
- Strain the mixture through a nut-milk bag into a pitcher.
- Stir in the milk, vanilla, and maple syrup. Adjust sweetness to taste, adding more sweetener if necessary.
- Serve over ice and garnish with freshly ground cinnamon or cinnamon sticks.
