- 1¼ pounds ground chuck (80% lean ground beef)
- ½ teaspoon freshly ground black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground mustard
- 1 teaspoon worcestershire sauce
- ½ tablespoon vegetable oil, for cooking
- heaping ¾ teaspoon kosher salt
- 4 slices cheddar cheese
- 4 hamburger buns (lightly toasted, if desired)

Instructions
- In a large bowl, mix together the ground beef, pepper, garlic powder, onion powder, ground mustard, and Worcestershire sauce. Avoid adding salt at this stage. Shape the mixture into 4 large meatballs (about 4½ oz each) and press each into a 1-inch-thick disc, smoothing the edges. Refrigerate for at least 15 minutes or up to 24 hours.
- Activate your exhaust fan and heat a 12-inch skillet over medium-high heat. Season the patties with salt just before cooking. Pour in the vegetable oil, coating the skillet. Place the burgers in the skillet, smashing each one with a metal spatula until they reach about ¼-inch in thickness. Cook for about 2 minutes until they are browned and crispy on the bottom. Flip the burgers, top with cheese, and cook for an additional 2-3 minutes to reach your desired doneness. Serve on buns with your chosen toppings.
Notes
For a smoky flavor, consider adding a dash of smoked paprika to the meat mixture.
Use a hot cast iron skillet to achieve crispy edges on the patties.
