- 1½ lbs boneless skinless chicken breasts sliced thin
- 1 tsp salt
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp paprika
- 3 tbsp olive oil divided
- ½ onion chopped
- 2 jalapeño peppers chopped
- 2 cloves garlic minced
- 1 piece 1-inch ginger, grated
- 1½ tbsp brown sugar
- 1 can coconut milk (13.5 oz)
- 1 tbsp soy sauce
- ½ juice of lime

- chopped peanuts or cashews

Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Season chicken slices with salt, garlic powder, onion powder, and paprika; cook until browned and cooked through, about 10-12 minutes. Remove from skillet and set aside.
- In the same skillet, add remaining olive oil, chopped onion, jalapeño peppers, minced garlic, and grated ginger. Sauté until onions are translucent.
- Stir in brown sugar, coconut milk, soy sauce, and lime juice; bring to a simmer.
- Return the chicken to the skillet, allowing it to soak up the delicious sauce for a few minutes.
- Serve topped with cilantro, green onions, and peanuts or cashews with lime wedges on the side.
Notes
For added spice, keep the seeds in the jalapeño peppers.
You can substitute chicken with shrimp or tofu for a different protein option.
Serve over rice or noodles to soak up the flavorful sauce.
