Description

These Cottage Cheese Brownies are loaded with rich chocolate flavor and packed with protein from cottage cheese. Perfect for a quick dessert or healthy snack, these fudgy brownies are easy to prepare and satisfying to enjoy!


Ingredients

  • 2/3 cup cottage cheese blended
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat your oven to 350°F and line an 8×8-inch baking dish with parchment paper or grease it well.
  2. Blend the cottage cheese in a blender or food processor until smooth, resembling thick yogurt. Set aside.
  3. In a large mixing bowl, whisk together the eggs, vanilla extract, coconut sugar, and maple syrup. Mix in the blended cottage cheese until well combined.
  4. Stir in the almond flour, cacao powder, and baking soda until you achieve a smooth brownie batter.
  5. Gently fold in the chocolate chips, reserving a few to sprinkle on top for that extra chocolatey finish.
  6. Pour the batter into the prepared baking dish, smoothing it out evenly. Top with remaining chocolate chips if desired.
  7. Bake for 24–26 minutes or until a toothpick comes out mostly clean, leaving some moist crumbs for that fudgy texture.
  8. Allow the brownies to cool in the pan for at least 15–20 minutes before slicing. They'll firm up a bit as they cool.

Notes

For a sweeter touch, increase coconut sugar or maple syrup slightly.
Experiment with different types of chocolate chips according to your taste preference.
