- 4 large Roma tomatoes (seeded and diced)
- ½ red onion (diced)
- 15 oz can black beans (rinsed and drained)
- 15 oz can black-eyed peas (rinsed and drained)
- 10 oz package frozen corn kernels (thawed)
- 1 green bell pepper (finely diced)
- 1–2 jalapenos (seeded and diced)
- 1 bunch cilantro (chopped)
- â…“ cup olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon granulated sugar
- 1 lime (juiced)
- ½ teaspoon chili powder
- ¼ teaspoon garlic powder
- ¼ teaspoon cayenne pepper (optional)
- Salt and pepper (to taste)
Instructions
- Whisk together olive oil, vinegar, sugar, lime juice, chili powder, garlic powder, cayenne, salt, and pepper in a small bowl.
- In a large bowl, combine chopped tomatoes, red onion, black beans, black-eyed peas, corn, green bell pepper, jalapenos, and cilantro.
- Pour the dressing over the veggie mixture and toss until evenly coated.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
Notes
For a milder flavor, substitute red onion with green onions.
Add diced avocado or mango for an extra twist!
To keep cilantro fresh, add just before serving.
