- 1/2 cup butter
- 1 tsp garlic minced
- 1 cup heavy whipping cream
- 1 cup half and half
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups freshly grated parmesan cheese
- up to 1/4 cup hot milk (optional) or pasta water
- 1 pkg fettuccine noodles – cooked to package directions
- freshly chopped parsley for garnish
Instructions
- Melt the butter in a large skillet over medium high heat and add the minced garlic. Let simmer for just a minute.
- Whisk in the cream and half and half until fully incorporated, then bring to a gentle simmer.
- Add the Italian seasoning, salt, and pepper, whisking to combine.
- Slowly mix in the Parmesan cheese, allowing it to melt while stirring continuously.
- Once the cheese is fully melted and the sauce is smooth, gradually whisk in the hot milk or pasta water until the desired consistency is reached.
- Toss the sauce with the cooked fettuccine noodles and garnish with parsley if desired.
Notes
For a thinner sauce, add more hot milk or pasta water until the desired consistency is reached.
Use freshly grated Parmesan for the best flavor.
Garnish with parsley for added freshness.
