Description

Creamy Tomato Tortellini Soup is packed with irresistible flavors of Italian sausage, rich tomatoes, and creamy undertones, making it a perfect quick dinner option or comforting meal for the whole family.


Ingredients

  • 1 lb ground Italian sausage
  • 2 Tbsp olive oil
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 2 Tbsp flour
  • 2 cups beef broth
  • 1 28 oz can fire-roasted diced tomatoes
  • 1 28 oz can tomato puree
  • 1 tsp Italian seasoning
  • 1 Tbsp honey
  • 2 cups cheese tortellini
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup heavy cream

Instructions

  • Heat olive oil in a soup pot and sauté Italian sausage until browned.
  • Add onion powder, garlic powder, and Italian seasoning; stir until fragrant.
  • Sprinkle in flour to create a roux, mixing well.
  • Pour in beef broth and add diced tomatoes and tomato puree; stir and add honey, salt, and pepper.
  • Stir in heavy cream and return sausage to pot; bring to a gentle boil.
  • Add cheese tortellini and simmer until tender, about 7–9 minutes.
  • Taste and adjust seasonings before serving.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge.
For freezing, use a freezer-safe container; it lasts up to 3 months.
Consider adding Parmesan cheese as a garnish before serving.
