- 2 cups beef broth
- 1 28 oz can fire-roasted diced tomatoes
- 1 28 oz can tomato puree
- 1 tsp Italian seasoning
- 1 Tbsp honey
- 2 cups cheese tortellini
- 1 tsp salt
- ½ tsp black pepper
- 1 cup heavy cream
Instructions
- Heat olive oil in a soup pot and sauté Italian sausage until browned.
- Add onion powder, garlic powder, and Italian seasoning; stir until fragrant.
- Sprinkle in flour to create a roux, mixing well.
- Pour in beef broth and add diced tomatoes and tomato puree; stir and add honey, salt, and pepper.
- Stir in heavy cream and return sausage to pot; bring to a gentle boil.
- Add cheese tortellini and simmer until tender, about 7–9 minutes.
- Taste and adjust seasonings before serving.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge.
For freezing, use a freezer-safe container; it lasts up to 3 months.
