  • 4 cabbage steaks
  • 1/3 cup olive oil
  • 1 1/2 tsp. minced garlic
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. smoked paprika
  • 1 1/2 cups grated parmigiano reggiano cheese
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. chopped parsley

Instructions

  • Preheat the oven to 425°F and line a baking sheet with parchment paper. Wash and slice the cabbage in half vertically, then create 'steaks' about 1 inch thick from one half, ensuring they hold together at the stem.
  • In a bowl, mix olive oil, 1/3 cup grated Parmesan, garlic, salt, pepper, and smoked paprika. Brush this mixture onto both sides of the cabbage steaks.
  • Create cheese beds by placing about 1/3 cup of Parmesan onto the baking sheet for each steak. Position each cabbage steak on top of its cheese bed.
  • Roast in the oven for 20-25 minutes until the cheese is browned and crisp.
  • Drizzle balsamic vinegar over the steaks and garnish with fresh parsley. Serve immediately.
