- 1/2 cup dark chocolate chips
- 1 tsp coconut oil
Instructions
- Melt dark chocolate, coconut cream, and palm shortening in a saucepan over low heat until smooth.
- Add maple syrup, peppermint flavoring, and vanilla extract to the melted mixture; stir well and let cool.
- Chill the mixture for at least 2 hours until firm enough to scoop.
- Form chilled filling into small balls and place on a lined baking sheet; freeze for 1 hour.
- Melt dark chocolate chips and coconut oil in a microwave-safe dish until smooth.
- Dip each truffle in melted chocolate, coat fully, and shake off excess; place back on sheet.
- Garnish with a fresh mint leaf if desired, then let truffles set for 20 minutes at room temperature.
