Description

These Date Bars are a delightful blend of flavors, featuring oat flour, coconut sugar, and a rich date filling. They’re easy to make and perfect for dessert lovers looking for a wholesome treat!


Ingredients

  • 1 ½ cups oat flour
  • 1 cup old-fashioned rolled oats
  • ½ cup coconut sugar
  • 1 teaspoon vanilla
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter or coconut oil, softened
  • 1 package, 8 ounces dates, chopped (about 1 ¼ cups)
  • 1 cup water
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice

Instructions

  1. Preheat oven to 350°F and line an 8×8 square baking dish with parchment paper.
  2. In a saucepan, combine the chopped dates and water. Bring to a boil, then reduce to a simmer. Cook for about 10 minutes, stirring occasionally, until the mixture thickens and the dates soften.
  3. Remove from heat and mix in vanilla and lemon juice to the date mixture.
  4. For the crumble, mix the oat flour, rolled oats, coconut sugar, and baking soda in a medium mixing bowl until well combined.
  5. Add vanilla extract and softened butter to the dry ingredients, mixing with a fork or fingers until a crumble forms and the dough clumps together.
  6. Press 2 cups of the crumble mixture firmly into the bottom of the prepared baking dish to create the crust.
  7. Spread the date mixture evenly over the crust, smoothing it out with a spatula.
  8. Sprinkle the remaining crumble mixture on top of the date layer, pressing down gently with a spatula.
  9. Bake for 35-40 minutes, or until the filling is bubbly and the topping is golden brown.
  10. Let the bars cool completely before slicing them into 16 pieces.

Notes

These bars can be customized by adding nuts or spices such as cinnamon for extra flavor.
Store any leftovers in an airtight container at room temperature for up to a week.
You can substitute butter with coconut oil for a dairy-free version.
