Description

These Decadent Cottage Cheese Date Brownies are a delightful mix of flavors and textures, featuring creamy cottage cheese and naturally sweet dates. Ideal for a healthy snack or dessert, they offer a simple preparation and an irresistible taste that keeps you coming back for more.


Ingredients

  • 10 dates (soaked in hot water for 10 minutes to soften)
  • 1/2 cup almond flour
  • 4 tbsp chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 1/2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/8 teaspoon salt
  • 1 cup cottage cheese
  • 1/2 cup vanilla protein powder
  • 1 1/4 cups almond flour
  • 2 1/2 tbsp maple syrup
  • 2 tbsp cashew butter
  • 1 1/2 tsp vanilla
  • 1/3 cup mini chocolate chips

Instructions

  • Soak 10 dates in hot water for 10 minutes, then drain.
  • Blend dates with chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until smooth to create the brownie base.
  • In a large bowl, mix cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla until smooth.
  • Line an 8×8 inch baking dish with parchment paper. Press date mixture into an even layer at the bottom.
  • Spread the cottage cheese mixture over the brownie layer, pressing gently with damp hands.
  • Freeze for at least 1 hour until firm, then cut into squares.

Notes

For a cleaner cut when slicing, dip your knife in hot water and wipe it dry between cuts.
Using Good Culture cottage cheese will yield the best texture for these brownies.
Feel free to adjust the sweetness by adding more or less maple syrup.
