Description
These Easter Sugar Cookies are soft, sweet, and adorned with royal icing, deliciously combining butter and sugar. Perfect for spring festivities and gatherings, they’re easy to make and a joy to decorate!

- 1/2 cup unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 3 cups confectioners' sugar
- 2 tablespoons meringue powder
- 1/4 cup room temperature water
- 1/2 teaspoon vanilla extract
- gel food colouring
Instructions
- Cream together the softened butter and granulated sugar in a large mixing bowl using a hand mixer or stand mixer on medium speed for about 2 minutes until light and fluffy.
- Add the egg and vanilla extract, mixing until fully combined. Then, lower the speed and incorporate the baking powder and salt, followed by the all-purpose flour gradually until mixed well.
- Shape the dough into a ball and wrap it in plastic cling wrap. Chill in the freezer for 30 minutes or in the refrigerator until firm (at least 1 hour, up to overnight).
- Preheat your oven to 350°F (175°C) and prepare a half sheet baking pan by lining it with parchment paper or a silicone baking mat.
- Once the dough is chilled, let it rest at room temperature for 5-10 minutes. On a floured surface, roll out the dough to about 1/4-inch thickness. Cut shapes using an egg-shaped cookie cutter.
- Place the cutouts on the prepared baking sheet, leaving an inch of space between each cookie. Re-roll any dough scraps and repeat the cutting process.
- Bake the cookies for 8-10 minutes until their edges begin to turn golden brown. Allow them to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
Notes
Let the royal icing dry completely before stacking the decorated cookies.
