- 4 cups shredded cooked chicken
- 2 cups instant rice
- 10.5 oz cream of chicken soup
- 1 cup sour cream
- 1 cup frozen diced onion and bell pepper blend
- 10 oz diced tomatoes with chilies (1 can, undrained)
- 1.5 cups chicken broth
- 1.12 oz fajita seasoning packet (preferably McCormick brand)
- 8 oz shredded Mexican blend cheese
Instructions
- Preheat oven to 350°F and spray a 9×13 inch baking dish with nonstick spray.
- In a large bowl, combine chicken, rice, cream of chicken soup, sour cream, onion and bell pepper blend, tomatoes, chicken broth, and fajita seasoning.
- Transfer mixture to prepared baking dish and spread evenly.
- Cover with foil and bake for 35-45 minutes until rice is tender.
- Remove foil, sprinkle with remaining cheese, and bake uncovered for an additional 3-5 minutes until cheese is melted.
- Let cool for 5 minutes before serving.
Notes
Use rotisserie chicken for convenience and tenderness.
Add black beans or corn for extra texture and nutrition.
Store leftovers in an airtight container for up to 4 days.
