- ½ cup unsalted butter (113 g), melted, slightly cooled
- 2 large eggs
- 5 tablespoons rainbow confetti sprinkles, plus more for rolling
- 1 teaspoon pure vanilla extract, optional
- ¼ teaspoon almond extract, optional
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix together the dry cake mix, melted butter, eggs, and optional extracts until a thick dough forms.
- Gently fold in the rainbow sprinkles, being careful not to over-mix. The dough will be sticky.
- Let the dough rest uncovered for about 5 minutes to thicken slightly.
- Use a medium cookie scoop to portion out the dough onto the prepared baking sheets.
- Roll each portion in extra sprinkles, pressing them onto the dough to adhere.
- Place the dough balls on the baking sheets, spaced about 3 inches apart, and bake for 10-12 minutes.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For chewier cookies, do not overbake; they should look slightly underdone in the center.
You can substitute the almond extract with more vanilla if preferred.
