Description

These Easy Rotisserie Chicken Tostadas are a delightful quick meal made with crispy corn tortillas, savory chicken, and vibrant toppings. Perfect for busy weeknights or gatherings!


Ingredients

  • 10 small corn tortillas
  • 2 Tbsp avocado oil
  • 2 cups shredded rotisserie chicken
  • 15 oz canned black beans
  • 1 cup canned corn
  • 1 cup chunky salsa
  • 1 Tbsp taco seasoning
  • 1 ½ cups shredded cheese
  • ½ cup diced tomatoes
  • Optional toppings: shredded lettuce, sour cream, avocado, extra salsa, lime juice, cilantro

Instructions

  • Preheat oven to 450°F (232°C).
  • Arrange corn tortillas on a baking sheet and brush with avocado oil. Bake for 8-10 minutes until golden.
  • In a skillet, combine the chicken, black beans, corn, salsa, and taco seasoning. Heat for 4-5 minutes.
  • Spoon the filling onto crispy tortillas, then sprinkle with cheese.
  • Return to oven for 2-3 minutes until cheese melts.
  • Garnish with diced tomatoes and optional toppings. Serve hot.

Notes

Store leftovers in an airtight container; consume within 3 days.
Reheat in the oven at 350°F (175°C) for 10 minutes to retain crispiness.
