- 10 small corn tortillas
- 2 Tbsp avocado oil
- 2 cups shredded rotisserie chicken
- 15 oz canned black beans
- 1 cup canned corn
- 1 cup chunky salsa
- 1 Tbsp taco seasoning
- 1 ½ cups shredded cheese
- ½ cup diced tomatoes
- Optional toppings: shredded lettuce, sour cream, avocado, extra salsa, lime juice, cilantro
Instructions
- Preheat oven to 450°F (232°C).
- Arrange corn tortillas on a baking sheet and brush with avocado oil. Bake for 8-10 minutes until golden.
- In a skillet, combine the chicken, black beans, corn, salsa, and taco seasoning. Heat for 4-5 minutes.
- Spoon the filling onto crispy tortillas, then sprinkle with cheese.
- Return to oven for 2-3 minutes until cheese melts.
- Garnish with diced tomatoes and optional toppings. Serve hot.
