Description

This Elegant Graduation Cake with Fondant Cap Topper is not only stunning but also delicious! With layers of yellow and chocolate cake, creamy buttercream, and fun fondant decorations, it’s perfect for celebrating milestones in style.


Ingredients

Scale
  • 2 yellow sheet cakes
  • 2 chocolate sheet cakes
  • 1 cotton candy cake
  • 10 cups American buttercream frosting (tinted yellow with gel food coloring)
  • 4 cups marshmallow fondant (2 cups of black and 2 cups of white)
  • 1 batch rice krispie treats (can also use store-bought)

Instructions

  1. Bake 2 yellow sheet cakes, 2 chocolate sheet cakes, and 1 cotton candy dome cake. Let cakes cool completely.
  2. Prepare the yellow buttercream frosting while cakes bake and cool.
  3. For the cap cake, place the dome cake on a cake board and frost it. Chill for 20 minutes.
  4. Roll out black fondant and cover the chilled dome cake. Trim excess fondant with a pizza cutter and insert a straw in the center.
  5. Make the cap top from cardboard, color the edges black, and cover with fondant. Attach it to the dome cake with melted chocolate or royal icing.
  6. Roll rice krispie treats into a cylinder, cover with buttercream, and wrap in white fondant. Add fondant circles and a ribbon for a diploma.
  7. Assemble the cake by stacking chocolate and yellow sheet cakes with frosting in between. Pipe decorations on the sides and top.
  8. Set up dowels for support where the cap and diploma will sit on the cake. Add decorative letters using cookie cutters on the cake board.

Notes

For a cleaner finish, ensure all cakes are completely cool before frosting.
Use gel food coloring for vibrant and lasting colors in your buttercream and fondant.
If you’re short on time, store-bought rice krispie treats can be a great alternative.
