Ingredients

  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat the oven to 450 degrees Fahrenheit.
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Add chopped onions and sauté, stirring occasionally, for about 3-4 minutes, or until translucent.
  • Transfer the cooked onions to a large mixing bowl and let them cool for 2-3 minutes.
  • Mix in crumbled blue cheese, panko breadcrumbs, kosher salt, and coarse black pepper into the bowl.
  • Gently mash the mixture together with a fork until combined.
  • In the same skillet, add the remaining 2 tablespoons of unsalted butter over high heat.
  • Season the filet mignon steaks with kosher salt and black pepper on all sides.
  • Sear each steak for 3 minutes on each side until browned.
  • Top each steak with the blue cheese mixture, then place the skillet in the oven for 4 minutes (for rare), or 5-6 minutes for medium, adjusting for well-done steaks as needed.
  • Remove from the oven and let the steaks rest for 10 minutes, covered with a sheet of foil before serving.
