- 2 tbsp vegetable oil
- 3 garlic cloves, minced
- 3 tbsp pure maple syrup
- 2 tbsp Dijon mustard
- 1/2 cup reduced sodium beef broth
- 2 tbsp reduced sodium soy sauce
- 2 tbsp minced fresh parsley
Instructions
- Preheat the oven to 400°F (204°C).
- Remove silver skin from pork and pat dry.
- Whisk together soy sauce, garlic, maple syrup, Dijon mustard, salt, and pepper for glaze.
- Rub pork with garlic powder, rosemary, thyme, oregano, paprika, salt, and pepper.
- Heat vegetable oil in an oven-safe skillet and sear pork for 2-3 minutes on each side.
- Brush glaze over seared pork and roast in the oven for 20-25 minutes until it reaches 145°F (63°C).
- Let pork rest for 5-10 minutes, then slice and garnish with parsley.
