- 1.2–1.5 kg side of salmon
- 150 g unsalted butter
- 120 ml honey
- 3 cloves garlic, minced
- 360 ml sour cream
- 120 ml chopped fresh dill
- 1/2 grated eschalot
- 1 1/2 tbsp lemon zest
- 150 g dried cranberries soaked in 240 ml hot orange juice
- 120 g toasted almonds
- 80 ml chopped fresh parsley
- Pomegranate seeds for garnish
- Fresh parsley for garnish
- Lemon juice, to taste
Instructions
- In a bowl, mix sour cream, dill, grated eschalot, and lemon zest until smooth.
- Soak dried cranberries in hot orange juice for 15 minutes, then combine with almonds and parsley.
- Preheat oven to 180°C (350°F) and prepare parchment and foil for salmon.
- Melt butter in a saucepan, stir in honey and garlic until mixed.
- Drizzle honey-garlic glaze over salmon, wrap in foil and seal.
- Bake for 15 minutes until flaky, then broil for 7-10 minutes until golden brown.
- Let salmon rest for 5 minutes, then top with dill sauce and tapenade, garnish with pomegranate seeds and parsley.
Notes
Fresh salmon provides the best results; consider sustainable or farmed options.
Glaze can be made with olive oil for a dairy-free version.
Prepare sauces a day ahead for convenience.
