Description

These Graduation Cap & Diploma Sugar Cookies are perfect for celebrating achievements! With their irresistible flavor and simple preparation using butter, white chocolate, and vanilla extract, they are a must for your next graduation party. Enjoy homemade goodness with every bite!


Ingredients

  • 2 cups all purpose flour (plus more if needed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup butter (softened slightly)
  • 3/4 cups sugar
  • 1 large egg
  • 3/4 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 16 ounces white chocolate
  • 1/3 cup light corn syrup (plus more if needed)
  • food coloring (flesh tone and other color for your grad caps)

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, mix the flour, salt, and baking powder, and set aside.
  3. Cream together the butter and sugar until light and fluffy.
  4. Stir in the egg, vanilla extract, and almond extract.
  5. Add the dry ingredients and mix just until combined.
  6. If the dough is sticky, add a little more flour.
  7. Roll out the cookie dough on a floured surface to about 1/8 inch thick.
  8. Cut twelve 3-inch circles from the dough.
  9. Cut out twelve diamond-shaped grad caps from the dough.
  10. Use the diamond-shaped cutter to cut a notch in each circle of dough.
  11. Brush two edges of the diamond-shaped dough with corn syrup and insert it into the notch in the circle.
  12. Press the seams together with your finger.
  13. Bake for 10-14 minutes until the edges are set and tops are no longer wet.
  14. Let cookies cool completely before decorating.
  15. Reserve about 2 tablespoons of white modeling chocolate to color for tassels.
  16. Color 2/3 of the modeling chocolate with flesh tone food coloring and the rest with the color of your choice for the grad caps.
  17. Allow the colored modeling chocolate to rest at room temperature for 30 minutes.
  18. Roll out the flesh tone chocolate to about 1/16 inch thick and cut out twelve 3-inch circles.
  19. Repeat with the colored modeling chocolate for the grad caps.
  20. For each cookie, brush a light coating of corn syrup on top, place a circle and cap on the cookie, and press to seal.
  21. For tassels, roll modeling chocolate into tubes, extrude, and cut strands as needed.
  22. Pinch strands together and attach with corn syrup to complete the tassels.

Notes

For precise cookie shapes, use a ruler for measurements.
Ensure cookies are completely cooled before decorating to prevent melting.
Decorate creatively with different colors for each grad cap!
