If rice bowls were an option for every meal, they’d definitely be at the top of my list! This Greek ground turkey version is simply irresistible!

This recipe originated when I discovered half a tub of tzatziki lurking in the fridge and suddenly felt the urge for our favorite Mediterranean food truck’s delights.

Cooking ground turkey enhanced with my beloved homemade Greek seasoning resulted in an explosion of flavor. Fresh tomatoes and cucumbers drizzled with lemon juice and a high-quality EVOO (essential!) added an extra burst of taste. Everything comes together in a bowl featuring Greek Lemon Rice as the base and is generously topped with additional tzatziki and homemade hummus.

You won’t believe how it tastes! As someone who adores sauces, I could layer on creamy, dill-infused tzatziki to my heart’s content. (It’s simply amazing!)

  • Ground Turkey. I recommend 85/15 for more flavor; 90/10 or 93/7 work just fine. Feel free to substitute with ground beef, chicken, or lamb if preferred.
  • Greek Seasoning. Making this blend from scratch is a MUST! Though it may look like a long list of ingredients, if you have common dried herbs and spices on hand, you’re set.
  • Tomatoes. Cherry or grape tomatoes are ideal for maximized flavor.
  • Cucumbers. Mini cocktail cucumbers or seedless English cucumbers are perfect choices.
  • Olive Oil. A high-quality olive oil can impart significant flavor to the vegetables, so choose wisely.
  • Red Wine Vinegar. This should not be swapped for any other vinegar; it adds that signature Mediterranean taste.
  • Fresh Herbs. A combination of fresh dill and parsley will bring a bright touch to the rice.
  • Lemon. Fresh lemons are preferred for their flavor as bottled lemon juice can sometimes taste bitter.
  • Rice. I used basmati rice for testing, but you can substitute with long-grain white rice; just adjust the liquid accordingly if you want to use brown rice.
  • Feta Cheese. While it may seem optional, it gives a delightful salty kick to the bowl.

How to Prepare Greek Ground Turkey Rice Bowls

Reduce heat to low, cover, and let it simmer for 16-18 minutes until the rice is tender. Once cooked, remove from heat and stir in the remaining olive oil, lemon juice, and fresh herbs.

Step 2: Cook the Ground Turkey with Greek Seasoning

In a large skillet, heat another tablespoon of olive oil over medium heat and add the ground turkey, breaking it apart as it cooks. Sprinkle in 1 tablespoon of Greek seasoning along with another tablespoon of olive oil. Mix thoroughly and continue cooking for an additional 3-4 minutes until the turkey is fully cooked.

Step 3: Prepare the Cucumber Tomato Salad

In a bowl, toss together the cherry tomatoes, cucumbers, red onion, red wine vinegar, lemon juice, optional honey, olive oil, and Greek seasoning. Remember to use good quality EVOO, as it packs the dish with flavor!
