Description

These Ground Turkey Egg Roll Bowls are a delightful mix of flavors and textures! With ground turkey, fresh vegetables, and savory sauces, it’s a quick and healthy meal that satisfies your cravings for comfort food. Perfect for busy weeknights, this dish is both easy to make and incredibly delicious!


Ingredients

  • 1 tbsp olive oil
  • 3 green onions, chopped, separated whites from greens
  • 1 lb ground turkey
  • 16 oz cole slaw mix
  • 1 cup shredded carrots
  • 34 garlic cloves, minced
  • 1 inch ginger grated
  • ¼ c plus tbsp low-sodium soy sauce
  • 2 tsp sriracha
  • 12 tbsp sweet chili sauce
  • 1 tbsp toasted sesame oil
  • ⅓ cup chopped cilantro
  • ½ tsp pepper
  • ½ tsp salt, more or less to taste

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chopped whites from the green onions and sauté for 1-2 minutes.
  • Stir in ground turkey and sprinkle with garlic powder, breaking it into smaller chunks.
  • Cook until browned and no longer pink, adding minced garlic and ginger in the last minute.
  • Incorporate the cole slaw and shredded carrots, then stir in soy sauce. Cook for 4-6 minutes until vegetables are tender.
  • Reduce heat to low, then mix in sriracha, sweet chili sauce, sesame oil, green onion greens, and cilantro. Toss to combine and season with salt and pepper, adjusting soy sauce to taste.
  • Garnish with cilantro and sesame seeds before serving.

Notes

Feel free to adjust the level of spiciness by adding more or less sriracha.
This dish can be served over rice or noodles for a more filling meal.
For added crunch, top with crispy fried onions.
