- 3 Tbsp raw honey (melted if solid)
- 1/4 cup dijon mustard
- 2 Tbsp fresh lemon juice or white vinegar
- 1/4 cup avocado oil
- 1/4 tsp sea salt
- 3–4 boneless skinless chicken breasts (about 1 1/2 lbs)
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 Tbsp avocado oil (for the grill or pan)
- 8 cups chopped romaine (kale, or other greens, or a mix)
- 3/4 cup cherry tomatoes (halved)
- 1/2 red onion (thinly sliced)
- 1 med cucumber (peeled and sliced)
- 1 large avocado (thinly sliced)
- 8 slices bacon (cooked until crisp, and chopped or crumbled)
- 6 hard boiled eggs (sliced)
Instructions
- For the dressing, whisk together honey, dijon mustard, lemon juice (or vinegar), and olive oil in a bowl or blend using an immersion blender for a thicker consistency. Set aside or refrigerate.
- For the salad, combine sea salt, black pepper, garlic powder, and onion powder in a small bowl to season the chicken.
- Preheat your grill or grill pan to medium/medium-high heat and brush with 1 tablespoon of avocado oil.
- Season the chicken breasts all over with the spice mixture and grill them for about 5 minutes per side or until cooked through (internal temperature reaches 165°F). Remove from heat and let rest before slicing.
- In a large bowl, layer the salad greens, cherry tomatoes, sliced red onion, cucumber, avocado, cooked bacon, and sliced hard-boiled eggs.
- Thinly slice the grilled chicken and layer it into the salad. Drizzle with the honey dijon dressing or serve it on the side. Enjoy!
Notes
Feel free to substitute any greens you have on hand for the salad base.
The dressing can be made in advance and stored in the refrigerator for up to a week. It’s also great on sandwiches or other salads.
