Description

These lasagna roll ups are a delightful comfort food featuring savory beef, creamy ricotta, and a zesty marina sauce, perfect for quick dinners or family gatherings.


Ingredients

  • 16 ounces lasagna noodles (cooked according to package instructions)
  • 1 teaspoon kosher salt
  • 1 pound ground beef
  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 32 ounces marinara sauce
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 15 ounces ricotta cheese
  • 1 large egg (beaten)
  • 3 cups mozzarella cheese (shredded, divided)
  • 1/4 cup Parmesan cheese (shredded)
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Preheat the oven to 375°F and spray a 9×13 inch baking dish with cooking spray.
  2. Boil water in a large pot, add 1 teaspoon kosher salt, and cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a large skillet over medium heat, cook the ground beef, breaking it apart. Add diced onion and minced garlic, cooking until soft, about 3 minutes. Drain excess grease.
  4. Introduce the marinara sauce, oregano, basil, salt, pepper, and red pepper flakes to the skillet. Stir well and simmer for 10 minutes.
  5. In a separate bowl, combine ricotta cheese, beaten egg, 1 1/2 cups mozzarella cheese, Parmesan cheese, and parsley.
  6. Spread 1/2 cup of the meat sauce at the bottom of the baking dish.
  7. Lay the cooked noodles on a baking sheet. Spread about 1/4 cup of the cheese mixture on each, topping with a tablespoon of meat sauce. Roll each noodle and arrange them in the baking dish. Pour remaining sauce over roll ups and top with remaining mozzarella cheese.
  8. Cover with foil and bake for 30 to 35 minutes. Remove foil and broil for a few minutes to brown the cheese.

Notes

Use only 12 cooked lasagna noodles to make roll ups, reserving any extras for any breaks.
Feel free to substitute ground turkey or chicken for a lighter option.
Fresh basil can be used instead of dried for an extra burst of flavor.
