- ½ cup sugar
- 1½ teaspoons vanilla
- 2 cups flour
- 3 cups sugar
- 1 cup flour
- 6 large eggs (room temperature)
- 1 cup lemon juice (fresh is best, about 4 lemons)
- 2 tablespoons lemon zest
- Confectioners’ sugar for dusting
Instructions
- Preheat your oven to 350 degrees.
- Line a 9×13 pan with parchment paper.
- In a medium bowl, mix together the melted butter, sugar, and vanilla.
- Add flour and stir until well combined.
- Press the mixture firmly into the base of the prepared pan and bake for 15-20 minutes until the edges are light brown.
- In a large bowl, combine sugar and flour, whisking to eliminate any lumps.
- Add the eggs, lemon zest, and lemon juice, then whisk until everything is mixed together.
- Pour the lemon filling over the warm crust and bake for 30-35 minutes until the center is set and does not jiggle.
- Remove from the oven and allow to cool completely at room temperature before refrigerating.
- Dust with powdered sugar before serving.
