Description

This Leprechaun Pistachio Fudge is packed with irresistible flavor and made with just three simple ingredients. Perfect for gatherings, it’s quick to prepare and a delicious homemade treat.


Ingredients

  • 3 ½ cups white chocolate chips (2224 ounces)
  • 14 ounces sweetened condensed milk
  • ¼ cup irish cream
  • 1 cup shelled pistachios roughly chopped

Instructions

  • Line an 8-inch × 8-inch baking dish with parchment paper or tin foil, allowing the liner to hang over the sides.
  • Pour condensed milk into a microwave-safe bowl and heat for 1 minute.
  • Place white chocolate chips in a large glass bowl and pour the warm condensed milk over them. Allow to sit for 1 to 2 minutes, then stir until fully melted. If necessary, microwave for an additional 15 seconds and stir again.
  • Add Irish cream to the melted mixture, stirring until fully incorporated, which may take a couple of minutes. Mix in 3/4 of the chopped pistachios.
  • Pour the fudge mixture into the prepared pan, sprinkling reserved pistachios on top and gently pressing them down.
  • Refrigerate for 3 to 4 hours until firm. Once set, lift it out of the dish, remove the liner, and cut into 25 even pieces. Store in an airtight container in the fridge.

Notes

Ensure the white chocolate chips are completely melted for a smooth fudge texture.
Feel free to adjust the amount of Irish cream for a stronger or milder flavor.
Store the fudge in an airtight container to maintain freshness.
