Description

  • 0.5 cup sun-dried tomatoes, julienne-cut
  • 1 tablespoon oil from sun-dried tomato jar
  • 1.5 cups yellow onion, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 32 oz chicken broth
  • 1 cup heavy whipping cream
  • 4 teaspoons fresh basil, plus more for garnish
  • 2 teaspoons kosher salt
  • 1.5 teaspoons dried Italian seasoning
  • 1 teaspoon garlic powder
  • 0.25 teaspoon crushed red pepper, or more to taste
  • 8 oz uncooked medium shell pasta
  • 3 cups fresh baby spinach, roughly chopped
  • 2 cups shredded rotisserie chicken
  • 8 oz cream cheese, cubed, room temperature
  • 1.5 oz parmesan cheese, finely shredded, plus more for garnish

Instructions

  • Heat oil from sun-dried tomatoes in a large Dutch oven over medium heat. Sauté onions and garlic until softened.
  • Stir in tomato paste and sun-dried tomatoes, cooking for 2 minutes.
  • Add chicken broth and heavy cream, along with basil, salt, Italian seasoning, garlic powder, and crushed red pepper. Bring to a boil and simmer for 12 minutes.
  • Add shell pasta, reduce heat, and cook for 12 minutes until tender.
  • Stir in spinach, shredded chicken, cream cheese, and Parmesan until cheeses melt.
  • Serve in bowls garnished with extra Parmesan, basil, and red pepper flakes.

Notes

Store leftovers in an airtight container at room temperature for up to 2 hours, or refrigerate for 4 days.
For freezer storage, use freezer-safe containers and consume within 3 months.
Consider adding different vegetables like carrots or zucchini for variety.
