- 1 pound boneless, skinless chicken breasts (or thighs), cut into 1-inch pieces
- Salt and pepper
- 1/4 teaspoon chili powder (optional)
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3–4 cloves minced garlic
- 1–2 teaspoons adobo sauce
- ½ cup oil-packed sun-dried tomatoes
- 2 cups low-sodium chicken broth
- 19 ounces cheese tortellini
- 1 cup heavy cream
- ½ cup Parmesan cheese (freshly grated)
- Fresh cilantro (chopped, or parsley)
Instructions
- Sear the chicken in olive oil and butter until golden brown, then set aside.
- Sauté minced garlic, chipotle peppers, and adobo sauce in the same skillet.
- Add sun-dried tomatoes, chicken broth, and heavy cream; combine.
- Stir in tortellini and return chicken to the skillet; cover and simmer until chicken is cooked.
- Mix in Parmesan cheese and garnish with cilantro before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
For longer storage, freeze in a freezer-safe container for up to 3 months.
Reheat gently on the stove, adding a splash of cream or broth if needed.
