Description

This Marry Me Chicken Tortellini combines tender chicken with cheese tortellini in a creamy Mexican chipotle sauce, making it perfect for a cozy dinner or special occasion.


Ingredients

  • 1 pound boneless, skinless chicken breasts (or thighs), cut into 1-inch pieces
  • Salt and pepper
  • 1/4 teaspoon chili powder (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 34 cloves minced garlic
  • 12 teaspoons adobo sauce
  • ½ cup oil-packed sun-dried tomatoes
  • 2 cups low-sodium chicken broth
  • 19 ounces cheese tortellini
  • 1 cup heavy cream
  • ½ cup Parmesan cheese (freshly grated)
  • Fresh cilantro (chopped, or parsley)

Instructions

  • Sear the chicken in olive oil and butter until golden brown, then set aside.
  • Sauté minced garlic, chipotle peppers, and adobo sauce in the same skillet.
  • Add sun-dried tomatoes, chicken broth, and heavy cream; combine.
  • Stir in tortellini and return chicken to the skillet; cover and simmer until chicken is cooked.
  • Mix in Parmesan cheese and garnish with cilantro before serving.

Notes
