Description

Ingredients

  • 4 cups water
  • 4 cups dandelion blossoms (only the yellow and white parts – it's ok if there is a bit of green)
  • 1 1.75 ounce package of powdered fruit pectin (49 g)
  • 4 1/2 cups granulated sugar
  • 2 tbsp fresh lemon juice

Instructions

  1. Rinse the dandelion blossoms in a strainer and remove the green parts, keeping only the yellow and white portions.
  2. In a large saucepan, bring 4 cups of water and the dandelion blossoms to a boil over medium heat.
  3. Simmer for about 5 minutes, then remove from heat.
  4. Let the mixture rest for about 10 minutes to infuse the flavors.
  5. Using a fine sieve, strain the mixture into a large bowl or measuring cup, pressing to extract as much liquid as possible. Aim for 3 cups of liquid; if short, add extra water.
  6. Discard the solids of the dandelion blossoms.
  7. Return the dandelion liquid to the saucepan, add the pectin, and bring to a boil.
  8. Add the granulated sugar and fresh lemon juice; stir constantly to dissolve the sugar for about 1-2 minutes.
  9. Remove from heat and let cool slightly, then skim any foam from the surface.
  10. Pour the liquid into sterile jars, leaving about 1/4 inch from the top.
  11. Seal with lids and refrigerate until the jelly sets, which takes about 4 hours.
  12. Store in the fridge between uses.

Notes

Ensure to use only yellow and white dandelion parts for the best flavor.
Jar sterilization is important for keeping the jelly fresh longer.
Refrigerate promptly after preparation to help it set.
