Description

Ingredients

  • 2 cups sugar
  • 1/2 cup butter softened or cut into slices
  • 1/2 cup milk
  • 1/4 cup cocoa powder
  • 1/8 teaspoon salt
  • 1/2 cup peanut butter
  • 2 teaspoons vanilla extract
  • 3 cups quick cooking oats

Instructions

  1. Line a sheet pan with parchment paper and set aside.
  2. Gather all ingredients and measure them out; you'll need to work quickly after starting!
  3. Combine sugar, butter, milk, cocoa powder, and salt in a large saucepan.
  4. Heat over low until the butter melts, stirring frequently.
  5. Increase heat to medium and bring the mixture to a boil. Boil for 1 minute and set a timer to avoid overcooking.
  6. Take off the heat and mix in peanut butter, followed by the oats.
  7. Scoop onto the prepared sheet pan using a #40 size cookie scoop.
  8. Allow to cool completely before transferring to an airtight container.

Chill the cookies in the refrigerator to set them faster.
