- 3 mint leaves
- 1 teaspoon brown sugar
- ice
- 2 ounces rum
- 2 ounces pineapple juice
- 1 ounce coconut milk
- ¾ ounce lime juice
- club soda
Instructions
- Muddle the mint leaves and brown sugar in a cocktail shaker to release the mint oils.
- Add ice to the shaker halfway, then pour in the rum, pineapple juice, coconut milk, and lime juice.
- Cover the shaker and shake vigorously for about 10 seconds until chilled and combined.
- Strain the mixture into a highball glass filled with fresh ice, and top with club soda. Garnish as desired and serve immediately.
Notes
For best results, use fresh mint leaves.
Adjust the sweetness by increasing or decreasing the brown sugar to taste.
