- 6 boneless pork chops (about 1 inch thick)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup Dr Pepper (not diet)
- ½ cup barbecue sauce (sweet and smoky works best)
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon cornstarch
- 1 tablespoon cold water
Instructions
- Arrange the pork chops in a slow cooker and season with salt and pepper.
- Add sliced onion and minced garlic on top of the chops.
- In a bowl, whisk together Dr Pepper, barbecue sauce, brown sugar, Worcestershire sauce, apple cider vinegar, smoked paprika, and garlic powder.
- Pour the sauce mixture over the pork chops, ensuring they are well coated.
- Cover and cook on Low for 6 hours or High for 3 hours until tender.
- Mix cornstarch with cold water and add to slow cooker to thicken the sauce, cooking on High for an additional 15 minutes.
- Serve with freshly chopped parsley on top and enjoy!

Store the pork chops in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
For a healthier option, you can use gluten-free BBQ sauce and skip the sugar.
