This Quick Ground Beef and Potatoes dish features tender Yukon gold potatoes and savory ground beef all in one pan, making it a perfect comfort meal that’s easy to prepare and full of flavor.

- 2 tablespoons olive oil
- 1 ½ pounds lean ground beef
- 2 teaspoons kosher salt, divided
- 2 cloves garlic, minced
- 1 medium yellow onion, finely diced
- 1 teaspoon smoked paprika
- ½ teaspoon freshly ground black pepper
- 1 ½ pounds yukon gold or russet potatoes, chopped into ½ inch cubes
- 1 cup water
- 1 teaspoon yellow mustard
- 1 tablespoon worcestershire sauce
- 4 tablespoons ketchup
- 2 cups sharp cheddar cheese, grated
Instructions
- Preheat the oven to 375°F.
- In a large heavy-bottom, non-stick skillet with a lid, heat 1 tablespoon of olive oil over medium-high heat. Add the diced onion and lean ground beef, seasoning with 1 teaspoon of salt, garlic, black pepper, and smoked paprika.
- Break apart the beef with a spoon and cook for 5-8 minutes until browned, stirring occasionally until the onion is softened.
- Remove the cooked meat from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and chopped potatoes, then sprinkle with 1 teaspoon of salt. Cook for about 1 minute until fragrant, stirring occasionally.
- Add ¼ cup of water and cover, cooking for 15-20 minutes while stirring frequently until potatoes are just tender.
- Add the cooked beef back into the skillet along with yellow mustard, Worcestershire sauce, and ketchup, mixing well. If the mixture appears dry, add another ¼ cup of water as needed.
- Sprinkle half of the grated cheese over the mixture, then stir to combine. Layer the remaining cheese on top and place in the oven for 5 minutes or until cheese is melted. Serve warm.
Notes
If preferred, you can skip heating the oven and serve it directly from the skillet after adding the cheese and mixing.
For added flavor, consider topping with fresh herbs or your favorite garnishes.
Stir occasionally while cooking the potatoes to prevent sticking and ensure even cooking.
