Description

This Rich Chocolate Mousse features an irresistible blend of dark chocolate, eggs, and cream. It’s simple to make, offering a delightful experience for dessert lovers looking for a homemade treat.


Ingredients

  • 3 eggs (~55g/2 oz each)
  • 125g / 4.5 oz dark cooking chocolate, bittersweet / 70% cocoa
  • 10g / 0.3 oz unsalted butter
  • 1/2 cup cream, full fat
  • 3 tbsp caster sugar (superfine white sugar)

Instructions

  • Work steadily to keep your whipped egg whites and cream from warming up too much.
  • Separate the eggs while they are cold; place whites in a large bowl and yolks in a small bowl. Set whites aside for now.
  • Whisk the yolks until they are uniform in texture.
  • Melt the chocolate and butter together in a microwave-proof bowl. Microwave in 30-second intervals, stirring in between, until smooth. Allow it to cool slightly before continuing.
  • Whip the cream until it forms stiff peaks, careful not to over-whip.
  • Add sugar to the egg whites and beat until firm peaks form.

Notes

Ensure not to over-whip the cream to maintain its texture.
Warming the whipped egg whites and cream can affect the final consistency of the mousse.
Refrigerate the mousse for a couple of hours before serving for the best results.
