Ingredients

  • 6 Italian sausage links
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 12 ounces pasta (penne or your choice)
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package directions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add the sausage links, cooking until browned on all sides. Remove sausage and slice into rounds.
  3. In the same skillet, add bell pepper, zucchini, garlic, and sauté until tender, about 5-7 minutes.
  4. Stir in the sliced sausage, cherry tomatoes, Italian seasoning, red pepper flakes, salt, and pepper. Cook for an additional 3-4 minutes.
  5. Combine the cooked pasta with the sausage and vegetable mixture, tossing everything together to combine well.
  6. Serve hot, garnished with fresh basil and grated Parmesan cheese.

Notes

Feel free to use any type of sausage you prefer, such as chicken or turkey.
You can also add other vegetables such as spinach or mushrooms based on your taste.
This dish can be made in advance and reheated for quick meals.
