Description

This Sausage, Butter Bean & Tomato Tray Bake is packed with delicious flavors and requires minimal prep time. A perfect choice for a comforting, homemade meal that everyone will love!


Ingredients

Scale
  • 1 onion
  • 1 pepper
  • A pack of your favourite sausages (6 or 8, or 12 are fine for this recipe)
  • 1 tsp garlic puree (or 1 fresh, crushed clove)
  • 1 tbsp tomato puree
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tbsp worcestershire sauce
  • 1 tsp sugar
  • 1 400ml tin baked beans
  • 1 400ml tin chopped tomatoes

Instructions

  • Cut the onion and pepper into bite-sized pieces based on family preferences.
  • Heat oil in a large frying pan with sides.
  • Add the sausages and cook, stirring to coat in the oil, until one side is browned to your preference.
  • Once one side is browned, add the onions to the pan and stir the sausages so an uncooked side is facing down to brown.
  • Cook until both sides of the sausages are to your liking and the onions are browned.
  • Add the chopped pepper, sugar, garlic puree, tomato puree, paprika, and thyme to the pan. Stir to coat the sausages and onions, cooking for another minute.
  • Stir in the tin of chopped tomatoes, baked beans, and Worcestershire sauce.
  • Cover with a lid and allow to cook on low heat for 5-10 minutes until thickened and heated through.
  • Serve hot, ideally with mashed potatoes and buttered bread.

Notes

Feel free to use any type of sausages you prefer; chicken or vegetarian options work well too.
Adjust the spices to suit your taste; add more paprika for extra warmth or different herbs for varied flavors.
This dish can be easily adapted with seasonal vegetables for added nutrition.
